all you blokes love to shoot game..

but what do you do with it after its all over.???
feed it to the dog ?
leave it in the paddock to rot?

or do you put it in the pot?

what are you favorite all time game receipies??

i will start you off with one of my favorite.

Skin gut clean etc. small goat.
(the smaller the better)

cut enough pieces about size of an orange to fill
camp oven about2/3 full.

add 1/4 cup olive oil

juice 1 lemon

a little sprig chopped rosemary

salt pepper

(1 cup white wine and 3 cloves garlic optional)

marinade meat in camp oven in a cool place minimum 1 hour
turning meat occasionally.

put oven in a small pit on top of hot coals just before your afternoon hunt.
not too hot.
you want it to just cook not burn.

3 to 5 hours later.......

when you get back from hunt, turn meat and add more coals.

have a couple beers and leave 1 hour.

add potatos to the oven that have been partially boiled and cut into chunks and spoon the juices over them that are in the bottom of the camp oven.


put coals on top of the oven for 1 hour

eat and enjoy


if cooked properly goat should melt in the mouth
and be absolutely delicious

Nice work mate,

I was hunting with an ex butcher once and he did a young goat with a can of pears, after a couple of hours the pears were gone but the meal was delish. Sorry I don't have more details.

We do the same thing with goats, but we put in anchovies and prunes.

Roll roasts full of antipasto stuffing are good too.

the wife and i dont like eatin goat,imo its only good for jerky

young venison when you can get it....now thats something special !!
coach ..why dont you put your favorite venison receipe up here.

for me.. bambi goes into chops on the barbie.

and the legs are boned and rolled up with some stuffin of apple breadcrumbs ginger and garlic and whatever else ya want;
then straight in the oven.

pd we had twenty meat goats,and we ate six of em ourselves and sold the others
two of them were capretto and cooked to perfection,wifes uncle charlie is an old italian butcher who loves the stuff,he cooked it
we just didnt like the "goaty"flavour
that was my opinion thats all,im sure some of you love the stuff
we also had two milking goats and we didnt like the milk either
and a headbutt up the ass is real annoying

never had venison
id love to try it some day

fair enough.
i sometimes muster big mobs of feral goats for live export.
ive been butted plenty times myself by feral goats
and i saw my uncle get his teeth knocked out by one.

goat meat certainly has a characteristic smell
and isnt for everyone
