Found a good website with all sorts of recipes for those little fluffy critters.
Of course, check the organs before you take them for meat.

Last night i dined on bbq'd butterfly'd rabbit backstraps shaken in chicken seasoning and flour: Supoib!

Tonight i put away 4 meals of rabbit rissoles, for when my wife is in hospital with our little one which is due in 3 weeks. She won't eat rabbit. Her loss i reckon.

Recipe:
Ingredients
2rabbits (or 8 'hind legs)
1large onion, finely chopped
2garlic cloves, crushed
3 teaspoons mixed herbs
a handful chopped parsley
1and 1/4 cup white flour
½ cup bread crumbs
2eggs
1 tablespoonchicken seasoning
salt


Method
Boil the rabbits until the meat can be easily removed from the bones.
Drain and bone the rabbit joints.
Finely chop the meat, (use a mincer or food processor if you like)
Mix the meat with the onion, garlic, parsley, flour, bread crumbs, eggs and
seasonings.
Form into small patties.
Roll the patties in a little extra wholemeal flour.
Fry or barbecue in a small amount of oil

Went out with the rifle the other night and shot 27 bunnies all headshots. gave some away to relations and we have been having some every now and then in a casserole and its been fantastic. its good to be able to go out and get that many rabbits whenever you want. hasnt seemed to put a dent in the population ither.

I know dinner taste better when I harvested it myself. While away at work I grab a mud crab from the mangroves after work and cook it up, its taste heaps better then a brought one and for some reason I don't feel guilty eating a whole one.

Same with red meat and fish

Being on a farm we dont really buy a lot of red meat but when i bring home a goat or 10 deer legs from the southeast it is really a big money save. And like you said always tastes better when you know where its come from and what condition the animal was in.

I baked 3 half grown rabbits on Wednesday for dinner with roast vegies and gravy.

3 young rabbits
4 teaspoons cranberry sauce
1 ripe mango
1 onion

Dice the onion up very small and distribute inside the 3 rabbits,baste the cranberry sauce over the outside the rabbits,cut the mango into large slices and lay it on top of the rabbits,pour cooking oil over the rabbits with about a 1/4" oil in the bottom of the baking dish.Cover the lot with alfoil and cook in a 240 degree fan force oven for 40 minutes,remove from oven and remove alfoil and cook again to brown the meat for another 25 minutes.Remove and serve with roast vegies and traditional gravy.

I like bbq or stir fried rabbit as well as roasted for doing on the bbq I soak them insalt water and soy sauce for acouple of hours then drain pat meat dry break rabbits into portions and bbq over medium heat basting with honey soy occasionally.To do stir fried rabbit soak in salt water and soy sauce for awhile then drain dry and with a good knife remove meat that u want then cook as u would with any other stirfry eg-chicken.The best way to roast I think is in the good old camp oven using your favourite stuffing and trimmings.

My mouths watering just sitting here reading all these menu's. All I got to do now is fond a property with rabbits :cry:

Not a massive rabbit fan but don't mind the odd one.What I found the best thing to do is soke them overnight in water and a little white viniger.After that you can do anything you want with them.Takes a fair bit of the game taste out of them as well.
