i make my own goat jerky,from our farmed goat
i cut the meat about 1cm thick and 2 1/2 cm wide,cut off all the fat,itll crisp and curl up and is crap
i marrinade it as long as i can,over 24 hrs.
in a mix of worcestershire sauce,hot paprika,honey,salt,salt and pepper and a few other spices
i lay it flat on an oven rack and dry it in the sun for ages or in an oven at 60 0c for about 10 hrs
and store it in a dry place
and eat it with way too much beer
