I hope HOOD and NormGunston like this, because it's what we're having when they come to visit.

One leg of Cabrito (Roast kid goat). I marinate it in a good red wine (Shiraz usually) a bit of worcestershire sauce, salt, pepper, crushed garlic and rosemary.

Roast it in a pan with alfoil over the top with just a few holes in it. 200 degrees c for 10 minutes, then down to 180 for the required length of time. (Test it to see if the juices run clear to know when it is done) Open once to baste with the juices while roasting. I recommend roasting it covered as Goat tends to dry out a bit when roasting.

Roast Cabrito leg will be purple due to the Shiraz. Let it stand and then slice thinly. Cut slices into strips.

On pita bread, lavash bread, mountain bread etc. spread garlic mayonnaise (1 part crushed garlic to 5 parts mayo), then shredded lettuce, sliced tomato, a few onion rings, grated cheese (this is important) then the sliced cabrito and lastly some BBQ sauce. Roll the Yiros up and place it in a sandwich press until the cheese melts enough to hold the yiros together, and the bread starts to brown.

Lots of juices run out when you eat, so it is impossible to be polite. Good with beer (but what isn't?).

About 2 each normally does the trick. Enjoy. :D

Mmmm the mouth is watering already sounds great.
Just incase you feel the need to taste test that red and run out while cooking tea I'll bring another couple to have with tea. :lol:

nah i think souvalaki is greek beacuse i my local fish n chip shop is greek and i was talking to the guy tonite nd he was tought the recipe from his great grandfather of somthing. But they make a bloody good souvalaki . Funnely enough i had one tonite.

Yeah Luke,
Going by population, Melbourne is the second biggest Greek city in the world after Athens.
From when i lived down there i can definitely tell you that Souvlaki is Greek.

Athough being in Melbourne, as they are all Mexicans, maybe you weren't too far off! :lol:

But without being a smart ass the one you want for GOAT is this Kuyu kebabı which is Turkish, of course when the Greeks invaded this area in I think 1919 they then replaced it with Lamb which to my mind makes the Greeks pretty dang smart......after all you don't have to marinate the crap out of lamb to get rid of the rancid smell or Flavour :D

Or "Cabrito" which I think is South american Roast Goat ! Roast kid Goat maybe....... but alas its still stinking goat...... :lol:

Personaly I would save the wine drink it first all of it, then eat the goat, bit like when you go out on the booze ya know and eat them flaming Kebabas at 4am in the Morning............. :oops:

I don't find that a kid goat has a rancid smell or flavour Willy.
And after eating goat for a while, i am starting to find that lamb has a strange smell to it. :wink:

This dish can be used with many different meats. I know this because i am sitting here at the moment quite satified with an imperial pint glass of bundy and coke at my side after eating fallow deer yiros.

The venison unfortunately was not harvested by me, but supplied by Ant (NormGunston) after his SA deer hunt with XTFreak. Thanks mate, we did it proud.

Some might think it is a travesty to do such a thing to venison, but hey, whatever you use, if you enjoy it as much as i enjoyed that yiros tonight, you have used the food well.

I also am running the fridge down, as i move interstate in a week.

But all is not lost. I will be having venison later this week to. :D

Ant left for Japan at 3am this morning, but before he left he asked me to come over to his sisters place last night where he gave me a leg from the fallow he shot as he couldnt' take it home with him.
so it's in the freezer at the moment.
I'll thaw it out and cut a nice roast or steaks from it and then make some jerky from the bits left over :P
