Rabbit is deboned, rubbed with a paste of rosemary sage and roasted garlic then stuffed with a mixture of parsley, rice that has been cooked in chicken stock, and mushrooms and bacon that had been fried in the rabbit's fat. The sauce is a reduction of stock with shallots, garlic, a bay leaf, peppercorns and porcini mushrooms with a knob of butter whisked in at the end.

The venison (a fillet from my recent buck) was peppered and then wrapped in thin slices of bacon fat before roasting to prevent it drying. The sauce is a reduction of shiraz and raspberries.

The parsnip and sweet potato are roasted in olive oil and pepper, the snow peas are steamed and the wine is a light Italian red.

The photo is deliberately a bit fuzzy for realism because as the saying goes "I love to cook with wine, sometimes I even put a little in the food".
