I saw an article about a day or two ago about some guy who had hit an albino fallow stag (I think it was) and beheaded it to keep as a trophy or something. Apparently there was 'public outrage' in the surrounding area because it was sort of a fabled creature in the nearby area :P The prize animal of their forest.

Here is a photo of a white fallow deer that is hanging around my place. I have run across it a few times, but I am not going to shoot it, I'll let it breed more white genes into the mob. The first time I saw it I mistook him for a goat.

Near one of the locations I hunt there is an Albino Kangaroo and while driving out to my hunting area I occasionally see it with the rest of the mob.
You can bet some "shooter" will eventually take it.

They look like they stand out. Sometimes i feel sorry for white goats they stand out on a hill side a good distance away even with out glassing.

The albino whitetail in the US are a real oddity and so they are protected in many areas, the white deer shown in this thread are not albino, they are just the white color version of the fallow. They are quite common in some places and I know a few blokes who remove them from their patch so that poachers can't easily find the herds ;)
